Tasting Note
COLOR:  Deep Dark Red.
NOSE:  Blackberry, Blueberry and Dark Ripe Cherries.
PALATE:  Full of Dark Ripe Summer Berries Mixed with Cocoa and A Hint of Vanilla.
FINISH:  The finish is long with notes of Cassis and Dark Chocolate
TANNINS & ACID:  Well Integrated and Balanced throughout with Medium to Bold Tannins.
DECANT:  Drink now or hold for several years.

HARVEST DATE:  6 September 2014.
TONS HARVESTED:  2.26
BRIX:  23.8’ with a 72 hour Cold Soak.
FERMENTATION:  Whole berry in stainless steel tanks. D-80 Lallemand Yeast. Daily pump-overs.
48 hour extended maceration. 100% Malolactic conversion using ML Alpha.
COOPERAGE:  Nadalie Colbert French Oak, 2 years.
BOTTLING:  15 August 2016, Aprox 125 Cases produced Alcohol 14.5%, pH 3.64, TA 6.4 .
